Elstar apple trees are one of Europe’s most popular apples a decade ago. The Elstar apple tree was developed in Holland in 1955, a cross between Golden Delicious and Ingrid Marie. Elstar apple typically has red stripes over yellow, large fruit with firm (crisp, but not hard) lemon-white flesh. It may be used for cooking and is especially good for making apple sauce. In general, however, Elstar apples are used in desserts due to its sweet character. As with most late season apples, flavor is enhanced with three to four weeks of storage.
